I need to read some war novels for my English class, and they need to have a lexile score of above 700. . .
Books I already plan to read: American Sniper, Flags of Our Fathers, The Things They Carried, Lone Survivor, All Quiet on the Western Front, The Red Badge of Courage, Navajo Code Talkers, Unbroken.
So what war novels would you guy recommend? And if you could, please leave a summary of the plot for me so I can get an idea of what to post.

Several of the books you listed are not novels, they are autobiographies or non-fiction.
Catch-22 Slaughterhouse-Five I have heard Gravity's Rainbow is great, and the film for When the Wind Blows was very good, but I do not know if the book is any good.

Novels are always easier to write about. If you have to write an English paper on it, go with fiction over non-fiction.

Don't read War and peace. Try "Better Times Than these" by Winston Groom (a Vietnam war novel by the same guy who did Forrest Gump- it's well written, but not hard to understand or read), "Born on the 4th of July" and "in the lake is the Woods" by Tim O'Brian (this is short and amazingly disturbing novel about a man after the Vietnam war).
They are all novels. Very very good.
